Flowers: The flowers are produced in Summer.
Growing conditions: Perpetual Spinach is an herbaceous biennial plant with soft bright green leaves up to 25cm long. Spinach is easy to grow. It likes sandy soil, plenty of water and regular liquid fertiliser. While it will grow in shade, you get more if it gets some sunshine. It grows best in cool climates, as hot weather makes it flower and go to seed, then the leaves are small and less useful. Cut off any seed stalks. It can grow to 50cm tall.
Uses: Spinach leaves are very versatile. Spinach can be used as delicious, salad leaves or cooked in almost any cuisine. It is wonderful in Greek spinach pie, or quiche. It is lovely in lentil dhal, casseroles, soups curries, stir fries, dips, puree, pasta, lasagne. It goes well with ricotta as a filling in canneloni. It cooks very quickly.
Medicinal uses: Spinach is rich in dietary fibre, iron and vitamins.
Pollination requirements: Self-Pollinating.
Harvest time Pick the young tender leaves any time you wish to use them by tearing off the outside leaves, or pull the whole plant out. To clean the leaves for use, float the leaves in warm water to remove any dust. Store spinach unwashed in the refrigerator.
